Waffles for Breakfast, Waffles for Dinner

For Kathye Hamm and her family, waffles are tied directly to joy.
Whether served sweet with pecans or savory with ham, waffles became a centerpiece for birthdays, holidays, lazy mornings, and family reunions. Over time, the recipe became inseparable from celebration and togetherness.
Some recipes endure because they feed people. Others endure because they become woven into family identity. This one does both.
Pecan/Ham Waffles
Ingredients
1 3/4 cup flour
1T baking powder
2 eggs, separated
1 3/4 cup milk
1/2 cup oil
1 cup chopped pecans OR
1 cup shredded ham
Instructions
Combine flour baking powder and salt
Combine egg yolks, milk and oil, then stir into dry ingredients
Beat egg whites until stiff and fold into batter
Sprinkle 2T pecans on batter in waffle iron for "sweet" waffles OR
2T shredded ham on batter for "savory" waffles
Story
"My husband, daughter and I have always loved waffles! Waffles for breakfast are a special treat, but waffles for dinner is the best! We used to just have plain waffles for breakfast and the ham waffles for dinner until I found this recipe for Pecan Waffles. Now we always add the pecans when we are having waffles for breakfast. Beating the eggs whites makes them so fluffy, it's worth the extra time.
I have so many memories of happy family time that are tied up in the waffles! We have them for birthdays, Mothers and Fathers Day, when we have a rare lazy morning and my daughter always requests them when she comes home for a visit. We are instantly happy when it is a waffle meal!!!!"
