These gluten-free pecan pie muffins are more than a sweet treat—they are an act of hospitality.

Gluten Free Pecan Pie Muffins

Ingredients

  • 3/4 cup dark brown sugar

  • 1/2 cup King Arthur Gluten Free 1:1 Flour

  • 1/2 cup butter, softened

  • 1/4 cup chopped pecans

  • 2 eggs, beaten

Instructions

Preheat oven to 350 degrees

Using mini muffin tin, spray with Pam

Stir together brown sugar, flour and pecans

In separate bowl, beat butter and eggs until smooth

Stir into dry ingredients just until combined

Using small cookie scoop, place batter in tin

Tin cups should be 2/3 full. I usually get 21 muffins

Bake at 350 degrees for 7 to 8 minutes

Cool muffins on wire racks

Story

Several years ago, I found this recipe online. I have made this for Ladies Bible Study and various other breakfast gatherings. It is important to me to always have GF options available for our members and guests. We also, try to accommodate any other special dietary restrictions. This has been our tradition in the Living Water Kitchen.
